A new favorite condiment!

While traveling with Chef Liza in Chianti, we learned to cook so many amazing dishes! Yes, we ate a lot! One of my favorite recipes was so simple; it is just a bunch of peppers with some simple seasonings. This dish can be used to accompany meat dishes or serve on a charcuterie board. It is full of flavor, and you will want to keep some in the fridge for everyday use!













Peperonata

Stewed Sweet Peppers

3 TBSP olive oil

1 onion, thinly sliced

2 red bell peppers, seeded and thinly sliced

2 yellow bell peppers, seeded and thinly sliced

4 Roma or plum tomatoes, seeded and diced

¾ cup white wine vinegar

2 TBSP sugar

2 sprigs oregano, stemmed and chopped

Salt

Pepper


In a large, heavy-bottomed pot, heat oil on medium-high heat. When the oil is hot, add the onions and peppers. Season with salt and pepper. Turn the heat down to medium-low and cook, occasionally stirring until the onions and peppers are tender and wilted with no browning; about 10-15 minutes. Add the diced tomatoes, vinegar, and sugar. Stir well and let simmer for another 20 minutes. Stir in oregano and season to taste with salt and pepper. Serve warm or at room temperature with grilled meat or a nice crusty bread.
